The Chardonnay grapes used in crafting the MCC were carefully hand-picked and sorted during the early morning hours at Cavalli. Following pressing, the juice underwent fermentation in stainless steel tanks to achieve a crisp and refreshing fruit character. After five months, the wine was inoculated and sealed under a crown cap before undergoing secondary fermentation in the bottle, resulting in a delicate effervescence.
