This Chenin Blanc presents lively and vibrant aromas reminiscent of pear, granadilla, and lime. On the palate, it offers a refreshing and zesty experience with notes of nectarine and hints of pineapple. The wine's bright acidity contributes to its length, texture, and a crisp, invigorating finish.
The grapes were carefully hand-picked during the early morning hours at Cavalli, and harvested in three separate batches. Following this, they underwent crushing, pressing, and settling overnight to ensure the clarity of the juice. The juice was then inoculated with two distinct yeast strains: one aimed at enhancing the expressive fruit profile, and the other aimed at imparting a fuller mouthfeel. Fermentation took place in stainless steel tanks, with periodic lees stirring post-fermentation to enhance complexity and texture.
